Anyone for Economic Relief?

I have two new favorite recipes I thought I would share:

Homemade Liquid Laundry Soap
1 Bar Fels Naptha Laundry Bar Soap
1 cup Arm & Hammer Washing Soda
1/2 cup Borax
Water
Grate the bar soap & dissolve in 4 cups water on medium-low heat in medium saucepan. Pour melted soap into 5 gallon bucket. Add washing soda & borax, stir. Fill to top with hot water and mix well. Cover. Let set overnight. Stir again. Fill a 1 gallon jug (milk jug works well) 1/2 full of concentrate, 1/2 water. Shake a couple times. Ready to use 1/2 cup-1 cup per load.
So, you end up with 10 gallons of soap for $1.81!!

Does anybody have an abundance of zucchini?

Chocolate Zucchini Cake

1/2 cup butter or margarine
1/2 cup veg. oil
1 3/4 cup sugar
1 tsp. vanilla
1/2 cup milk with 1 tsp. vinegar
2 cups grated zucchini
1/2 tsp. salt
1/2 tsp. cinnamon
2 1/2 cups flour
1 tsp. baking soda
4 Tblsp cocoa
Mix all together, put in greased 9x13 pan or 2, 8x8's.
Sprinkle with nuts & chocolate chips on top.(optional)
Bake at 325' for 35 minutes or till toothpick comes out clean.

Another family favorite from my mom

Zuke Boats
1 Large Zucchini
1 8 oz. cream cheese
1 package stuffing, prepared
Cut zucchini length wise, hull out. Put on cookie sheet and pop in oven while preheating to let it get soft. Meanwhile, prepare stuffing. Fill middles of zukes with cream cheese, (less than a whole brick if not a big fan), cover with stuffing. Bake loosely covered with foil for about 20 minutes.
A meal in itself or expand it with some pork chops or chicken, Yummy!
